Oriental Noodle Toss with Black Beans

The sesame oil really makes this. Excellent as a main dish or as a side dish to grilled or broiled salmon steak. Serve warm or at room temperature.

  • 1 T sesame oil
  • 2 T tamari or soy sauce, reduced-sodium
  • 1/2 tsp ginger (fresh grated is best)

Stir together in a medium-large serving bowl.

  • 8 oz thin spaghetti or other noodles

Put a large pot of water on to boil. As soon as water boils, stir in pasta and set timer for 6 minutes (9 minutes if not using a thin pasta.)

  • 1 can (15 oz) black beans, rinsed & drained
  • 3 green onions, tops & bottoms chopped

Add to bowl.

  • 1 pkg (10 oz) frozen pea pods or snow peas

When timer sounds, add pea pods or snow peas to boiling noodles for 1 minute. Drain. Toss with beans and sauce.
