Sunshine Carrot-Raisin Salad

This salad is a great way to get loads of beta-carotene and tastes like candy! Kids' Favorite!

  • 1/3 cup plain lowfat yogurt
  • 1 T sugar
  • 3 T Mayonnaise or Miracle Whip Light
  • 1/4 tsp vanilla extract
  • 3 dashes ground cinnamon
  • 2 dashes ground nutmeg
  • 1/2 cup raisins

In a medium sized bowl, mix together to make the dressing.

  • 1 can (8 oz) pineapple tidbits, in its own juice, drained

Reserve juice for another use. Mix pineapple into dressing.

  • 3 cups (10 oz) bag shredded carrots (about 5 medium or 45 baby carrots)

Buy pre-shredded carrots or use a food processor to shred carrots. Stir into dressing to coat well. Chill salad until ready to serve.

  • 2 T sweetened shredded coconut (remains less than 2 grams fat per serving)
  • 1 T peanut butter

For a variation add 1 of these as an option.
