Quick & delicious: can mix this up in 5 minutes and pop it in the oven for 20 minutes.

Preheat Oven to 425 degrees. Coat a 9" pie plate, 8" by 8" pan or 10 cup muffin tin with cooking spray.
  • 1 cup yellow, whole grain cornmeal
  • 1 cup flour (whole wheat pastry flour for added fiber)
  • 1/4 cup sugar
  • 1 T baking powder

Mix together in a bowl using a fork. Be sure baking powder is well distributed.

  • 1 cup plus 2 T skim milk
  • 1 T canola oil
  • 2 egg whites or 1 egg

Add dry ingredients and mix until blended.

Pour into sprayed baking pan.

Bake 20 minutes (15-17 minutes for muffins), or until toothpick comes out clean.
